They're not only seriously frickin' addictive, they're also somuchfun to make!
Potatoes get par-boiled, smashed (my favorite part, and soon to be yours, too), then roasted until they become crispy on the outside and creamy on the inside.
You can eat them as is, but they're even better when served with a tangy ginger-tahini dressing, chopped fresh herbs, thinly sliced chili peppers, and roasted peanuts.

PS: Want to make this more of a complete meal? Serve it alongside some baked tofu (or air-fried tofu, if that's you're thing) and a simple green salad with a red wine vinaigrette.
